Gelato Siciliano (Sicilian Gelato)

Gelato Crema (Cream Gelato)

Ingredients:

  • 650 grams milk
  • 180 grams sugar
  • 130 grams fresh cream
  • 40 grams glucose syrup
  • 30 grams honey or golden syrup
  • 150 grams pure paste or nuts

Directions:

Heat and stir the milk to 40°C.
Add the glucose and syrup, and heat to 80°C.
Add the cream.
Cool quickly.
Add the paste or nuts.

Gelato al Cioccolato (Chocolate Gelato)

Ingredients:

1 litre milk
200 grams sugar
120 grams fresh cream
25 grams dark chocolate
130 grams cocoa
90 grams glucose syrup
110 grams honey or golden syrup

Directions:

Heat and stir the milk to 40°C.
Add the glucose and syrup, and heat to 80°C.
Add the cream.
Cool quickly.
Add the paste or nuts. Buon Appetito!

Frutta Gelato al Gusto (Fruit-Flavoured Gelato)

Make a sugar syrup to use with the fruit flavours below.

Ingredients:

430 grams water
490 grams sugar
80 grams glucose syrup

Directions:

Mix all ingredients together.
Heat to 45°-50°C.

Limone (Lemon)

Ingredients:

600 grams cold sugar syrup
180 grams lemon juice
200 grams water
1 grated lemon

Fragola (Strawberry)

Ingredients:

550 grams cold sugar syrup
340 grams fresh blended strawberries
110 grams water
1 grated lemon

Melone/Mango/Papaia (Melon/Mango/Papaya)

Ingredients:

500 grams cold sugar syrup
500 grams fresh blended melon
1 grated orange
1 grated lemon

Limoncello

Ingredients:

500 grams sugar
500 millilitres water
1 litre 90° alcohol
15-20 grated lemons
